Gingery Tomato Lentil Soup

lentil soupThis is absolutely delicious. I love lentils as they are super easy to cook and have compounds that help control appetite. In addition “Ginger works like magic to spike your metabolism, while cinnamon helps keep your blood sugar steady.”

 

SERVINGS: 6

2 Tbsp olive oil
1 med onion, diced
2 med carrots, peeled and chopped
2 cloves garlic, minced
2 Tbsp grated fresh ginger
1 Tbsp tomato paste
2 tsp ground cumin
1 tsp smoked paprika
½ tsp ground coriander
½ tsp ground cinnamon
2 c dried brown lentils
1 28-oz can crushed tomatoes
5 c low-sodium vegetable broth
Salt and pepper, to taste
Plain low-fat yogurt, for serving, if desired

1. SAUTE the onion and carrots in the olive oil in a large stockpot until beginning to soften, 5 to 7 minutes. Add the garlic, ginger, tomato paste, and spices and cook for 1 minute, until fragrant.
2. ADD the lentils, crushed tomatoes, vegetable broth, and salt and pepper to taste. Cover, bring to a boil, then reduce heat to simmer. Simmer soup, stirring occasionally until lentils are tender, about 45 minutes. Serve hot, topped with a dollop of yogurt, if desired.
